No-OatMeal Cereal


This is a replacement for an oatmeal breakfast, very simple to make:

2 Servings

Ingredients:

  • 1/4 c Cashews
  • 1/4 c Pecans
  • 2 tbsp Flax Seed
  • 1 tsp Cinnamon, ground
  • pinch Nutmeg
  • 1/4 tsp Ginger, ground
  • 3 Eggs
  • 1/4 c Almond Milk, unsweetened
  • 1 tbsp Almond Butter
  • 1 Banana, mashed
  • 2 tsp Pumpkin Seeds
  • 1 handful Berries (optional)

Instructions
  1. Place Cashews, Pecans, Flax Seed & spices into a food processor and pulse to desired consistency (course is preferred for oatmeal).
  2. Whisk Eggs in a bowl.
  3. Warm Almond Milk on medium heat until comes to a gentle boil.  Slowly stir into eggs, careful not to cook the eggs.
  4. Mix the Almond Butter & Banana well, add to Egg custard and return to heat.
  5. Stir in nut mixture, until desired oatmeal consistency.  This will take only a minute or two. Add more Almond milk to thin if desired.
  6. Serve and garnish with seeds & berries.

This recipe was adapted from the Paleo Plan website.  The girls loved this one and it a nice break from eggs all week.

    Just had oatmeal for breakfast because I couldn’t find an alternative at the time. Would have loved to try this, but I’m strongly allergic to all nuts, so this would be more of a “last supper” than a start to my day. Any other suggestions that would consider someone like me?

      I’m thinking for the texture sunflower seeds and pumpkin seeds, one quick pulse to break them up a bit. Not sure how this would taste, but if you do try it, please post it.

    I found a different Oat-Free-Oatmeal at Paleo Project’s blog. It’s made with banana chips, coconut milk(or almonds), raisins, cinnamon & honey. It might just work for the odd change up for breakfast.
